KATY'S FAVORITE RECIPIES & DRINK

The Greyhound

The Greyhound is Katy Kiss's favorite drink in South of Happily. Unlike Katy's life, it's pretty simple. Ice, grapefruit juice (freshly squeezed is the best) and vodka. Don't ask Katy how much of each to pour. She likes to wing it. 

The Katy Sandwich

2 pieces of good rye bread. (Toasted)

2 pieces of good bologna. (I know, I know. Just trust me.)

*If you can't trust me, use salami.

Sliced red bell pepper

Cream cheese

Now build your sandwich.

Amounts are up to you, heavy on the cream cheese, light on the peppers Whatever makes you HAPPILY!

Hungarian Ham & Cheese (Magic Ham & Cheese)

1 box (16 oz) good quality Bowtie pasta 

6-8 oz ham cut into small bits. Size matters- but it's personal choice.

*Leave the ham out for vegetarian option.

In a large mixing bowl, add:

3/4 cup GOOD mayo

1.25 cups GOOD sour cream

Dash salt. Dash pepper
Mix.  Mix some more. Gently. 

Drain your Al Dente pasta, and slowly mix into the sauce with an additional 1/3 cup grated parmesan and 1/2 cup shredded Monterey-Jack cheese.  

When the pasta and sauce are thoroughly mixed, pour into a large glass baking pan. Add LOTS (or an amount you like) of shredded Monterey-Jack on top. 

Sprinkle a little parmesan on top of the shredded cheese. 

Bake at 350 for about 30 minutes.  (You want it hot all the way through)

The last 3 minutes (and this is important), put your oven on BROIL.

Don't walk away!  The cheese will get LOVELY crispy golden and crunchy. 

This will burn quickly, so seriously, no more than 2-3 minutes, depending on how quickly your oven heats to blazing hot.

Remove, cool for a wee bit and serve.

Make this with your choice of meat: Chicken, pork, or veal. (We prefer chicken)

Ingredients:

Meat (see above)

Flour

Eggs

Breadcrumbs

Salt & pepper to taste

Cooking oil.
